The process is straightforward. Whole potatoes are cut into fries, blanched to start the cooking process, dried to prepare for frying, fried to set the texture and color, and then frozen and packaged for shipment.

Lamb Weston does not add any gluten to its classic, uncoated fries. However, they do process gluten within their facilities, so the frozen fries are not gluten free certified.
